Five miles from the Pacific Ocean, MarFarm is located in the Edna Valley AVA.  Marfarm is organically farmed and benefits from a longer growing season with cool evenings which preserves its acidity.

WINEMAKING:
Our winemaking philosophy focuses on organically farmed vineyards and minimal intervention. Whole cluster and direct press.  Native yeast fermentation was allowed to proceed in new 500 liter French oak barrels for 2 months.  Following fermentation, the wine was aged in neutral barrels for 16 months.  Total acid is 7.8 grams/liter with a PH of 3.27.  Unfined and unfiltered.

TASTING NOTES:
Hint of new oak, lemon zest, green apple, hazelnuts and grapefruit on the nose. Piercing acidity with a hint of Grapefruit, almonds, and key lime zest with a medium long finish.  Very light sulphur. No cold stabilization to enhance the flavors and aromas. The “wine diamonds” at the bottom of the bottle are tartrate crystals which are completely safe and a sign of high quality.
